Lentils in instapot for 2 minutes. Add cauliflower, two more minutes.

Add two oils to pot and heat to med-high.

Add onion and tofu and 1 tbsp of soy sauce.

Add spices and cook until golden brown. You can also add some extra garlic and ginger here and salt and pepper.

Mix sauce components in vitamix.

Add lentils and cauliflower to pot and cook for a few minutes.

Pour sauce over.

Add 1/2 cup water.

Cover and cook 10-20 minutes on lower heat.

serve

Put in bowls. Serve as is or with white rice or noodles.

curry sauce

  • 1 can tomato paste
  • 1 can coconut milk
  • 1/2 cup cashews
  • 4 garlic cloves
  • 1 tsp ginger
  • 6 tsp garlic chili sauce
  • 1 tbsp tahini
  • 1 tsp lime juice
  • 1/4 cup almond milk

veggies + legumes

250g pressed tofu

300g cauliflower

1 onion

1/4 cup lentils

spices

(about a tsp of each, play with it)

garam masala

paprika

to taste

salt and pep

oils+

1 tsp coconut oil

1 tsp avocado oil

1 tbsp soy sauce
