  • Cook Gnocchi according to instructions
  • In a separate pan, heat up olive oil and add onions.
  • Saute for a few minutes.
  • Add cashew cream sauce + ~1/3 cup of water (and/or milk of choice: cow, almond, soy, etc), more if you want a less thick sauce.
  • Add 1-2 cups of chopped spinach
  • Stir and continue cooking for about 10 mins
  • If sauce gets too thick, add more water or milk and continue to stir.
  • Add cooked Gnocchi to the sauce and stir until evenly coated.
