Ingredients

  • 2 14oz packages of firm tofu
  • 3/4 cup of Cashew aioli (or
    💧
    Cheesy Vegan Cashew Cream Sauce
    )
  • 3 Tbs finely diced green onion
  • 1/4 cup grated carrot
  • 3 Tbs finely chopped parsley*
  • 3 Tbs finely chopped cilantro*
  • 3 Tbs nutritional yeast
  • 1 Tbs Dijon mustard
  • 1 1/2 Tbs curry powder
  • 1/2 tsp salt
  • 1/2 tsp pepper

*optional: 1 Tbs

Directions

  • Crumble tofu into a bowl
  • Add all other ingredients and stir until evenly mixed.

Serve on a tortilla or toasted rye bread with pickles, tomato, and/or arugula

Serves 6
