Ingredients
- 2 14oz packages of firm tofu
- 3/4 cup of Cashew aioli (or Cheesy Vegan Cashew Cream Sauce)
- 3 Tbs finely diced green onion
- 1/4 cup grated carrot
- 3 Tbs finely chopped parsley*
- 3 Tbs finely chopped cilantro*
- 3 Tbs nutritional yeast
- 1 Tbs Dijon mustard
- 1 1/2 Tbs curry powder
- 1/2 tsp salt
- 1/2 tsp pepper
*optional: 1 Tbs Green goddess
Directions
- Crumble tofu into a bowl
- Add all other ingredients and stir until evenly mixed.
Serve on a tortilla or toasted rye bread with pickles, tomato, and/or arugula
